Shiitake is the second
thing in the sauce.
After water, the largest thing in this sauce is shiitake mushroom extract — and there is a separate flake sachet of dried shiitake and dried white mushroom on top of it. That is where the savoury depth comes from, finished with an aroma of truffle. 15g of protein and 7g of fibre in a 105g bowl at 380 Calories — and it took a 2025 Superior Taste Award.
Boiled first, then dried. Never fried.
Samyang calls it "Korea's first premium non-fried noodle, made by boiling in water before drying". Most instant noodles are dried by deep-frying the block in oil; this one is boiled for a long stretch and then dried slowly at low temperature at Samyang's Miryang factory.
The point of doing it the slow way is texture. Samyang's own description is a firm, bouncy bite closer to fresh pasta than to an instant noodle — and it is also why the fat in this bowl is 7g rather than the 15–20g a fried block carries before any sauce goes near it.
The protein is built into that noodle: wheat flour, tapioca starch, then soy protein concentrate and isolate, chickpea powder and wheat gluten. Three of the top five ingredients are there to carry protein, which is how you get 15g of it plus 7g of fibre in one bowl.

Three packets, and two of them are mushroom.
The bowl arrives with three separate sachets. The sauce and the flakes go in before the water; the powder goes in at the end, after cooking, so it thickens rather than boils.
Shiitake mushroom extract is the second ingredient in the sauce, behind only water, with dried shiitake further down. Then the flake sachet is nothing but dried shiitake and dried white mushroom — two varieties, in visible pieces. Samyang finishes it with an aroma of truffle, which is the artificial truffle flavour in the powder sachet.
Creaminess comes from starch, palm and corn oil rather than from cream — there is no cream, milk or cheese on the ingredient list, and milk is not a declared allergen. It reads earthy and rounded rather than rich and heavy, which is also why it is the leaner bowl at 7g of fat against the garlic's 10g.

Be aware of the sodium. At 990mg a bowl this is roughly 43% of an adult's 2300mg daily reference intake — normal for an instant meal of this kind, but it is the one number on this panel worth watching if you are having them often.
You need a microwave.
Open the lid fully and take out the three sachets. Add the sauce and flakes, pour water to the inner line, and microwave for 5 minutes at 1000W — 6 minutes at 700W. Then stir the powder sachet through and eat.
No stove and no pot to wash, but this is not a kettle-only product: the cooking happens in the microwave, so check you have one before you order a box of them.
Vegan Certified (dairy free, meat free) and Halal certified, both per Samyang. It contains wheat, soybean, tree nuts (coconut) — the noodle is wheat flour and wheat gluten, so it is not gluten free.

Five minutes in the shared microwave and lunch is done. One bowl, no plate, nothing to wash up.
Late and tired
The slot that usually goes to delivery. This lands closer to a meal, for a fifth of the price.
The cupboard backstop
Shelf stable and self-contained. The thing you keep for the night nothing was planned.
It is a convenience meal, and it is honest about that. 15g of protein and 7g of fibre is a genuinely strong showing for the category — the sodium is the trade-off you are accepting.
Against what else is in the cupboard.
A packet of instant ramen
Cheaper, faster, and it will do the job. The difference is on the panel: a standard packet gives you well under half this protein and a fraction of the fibre. You are paying for 15g of protein and 7g of fibre, not for the convenience — the convenience is much the same.
Cooking actual pasta
Better, obviously, and cheaper again. It also needs a pot, a colander, a stove and fifteen minutes you may not have. The honest case for this bowl is the nights when the realistic alternative was not homemade pasta.
Tangle Garlic Oil
The other bowl in the range, same price and same 15g protein and 7g fibre. Garlic Oil is the sharper, oilier one; this one is the creamier, rounder one. Most people end up keeping both in the cupboard.

Questions answered.
Is it vegan?
Yes — Samyang lists it as "Vegan Certified (dairy free, meat free)" on the Tangle brand site, and it is Halal certified as well. Worth knowing if you read ingredient lists closely: the seasoning contains artificial chicken flavour and artificial meat flavour and artificial milk flavour. Those are synthetic flavourings rather than animal-derived ingredients, which is why the certification stands. As a sanity check, the Garlic Shrimp flavour in the same range is not marked vegan — the label is applied deliberately, not across the board.
Do I need a microwave?
Yes. The directions are: remove the three sachets, add the sauce and flakes, pour water to the inner line, microwave 5 minutes at 1000W (6 minutes at 700W), then stir the powder through. It is not a hot-water-only product.
Where does the protein come from?
A blend. In the noodle, soy protein concentrate and isolate come third in the ingredient list, followed by chickpea powder and wheat gluten. The front of pack leads with chickpea, but soy is doing most of the work.
Is it gluten free?
No. The noodle is wheat flour and wheat gluten, and wheat is a declared allergen. Not suitable for coeliac or gluten-free diets.
What allergens are declared?
Wheat, Soybean, Tree nuts (coconut). Note that coconut is declared as a tree nut on this pack because that is how the United States classifies it — under the Australian and New Zealand food standards coconut is not a tree nut. If you have a tree nut allergy, the relevant ingredient here is coconut oil.
How much sodium is in it?

Is it spicy?
No. There is no chilli in the ingredient list at all — the only pepper is black pepper. The Garlic Oil has crushed red pepper if you want a little warmth.
